Orange sweet potatoes

A good side/main dish pairing does wonders to elevate a meal. It balances the flavours, plus complements the colours and textures of the main dish. West Coast people are particularly fond of sweet side dishes. One favourite was and still is, orange sweet potatoes – downright superb with fried fish and other savoury dishes.

Ingredients (serves 4 – 6): 6 medium sweet potatoes; 500 ml fresh orange juice; 1 Tbsp orange zest; 125 ml brown sugar; 2,5 ml salt; 2,5 ml cinnamon; 45 ml golden syrup; 2 Tbsp butter.

Heat the oven to 180oC. Boil the sweet potatoes with their skins on till tender. Drain, peel and slice. Arrange the slices in a medium-sized ovenproof dish. Heat the remaining ingredients in a saucepan. Stir continuously until the mixture boils.

Pour the sauce over the sweet potato slices and bake for 40 minutes.

This vibrant side dish will definitely be a crowd-pleaser at any holiday or special event.
