This blend—crafted from 12 vineyards across granite, shale, clay and iron-rich soils—tells the story of the Swartland’s rugged beauty. Fermented in concrete and matured in neutral oak, the winemaking is minimal but meticulous: gentle extraction, whole-bunch ferments and 18 months of bottle ageing before release. The result is poised and precise.
In the glass, Elpidios unfurls with cranberries, pomegranate and a whisper of hibiscus. A hint of undergrowth and spice from whole cluster fermentation adds intrigue. The palate is lithe and layered: black cherry, hoisin and fine black pepper, all framed by chalky tannins and bright acidity.
This wine doesn’t shout—it converses, evolves and reveals with a perfectly proportioned finish. A touch warm at first, it softens beautifully with air, gaining depth and grace when served at 15-18°C. There’s definitely an authenticity here that speaks of place, people and patience.
Elpidios goes down well with dishes that complement its rich fruit flavours, structured tannins and subtle herbal/spice notes. These include grilled lamb chops with rosemary and garlic, Beef Bourguignon, mushroom and truffle risotto and duck breast with cherry sauce.
