A triumph of gastronomy, this Toffee Pear Pizza Pud by Sanet Eigelaar, Cup of Cake owner in Saldanha, is a wonderful alliance of substantial pastry, pears and toffee exploding with sweetness and joy.
Ingredients: 1x ready-rolled puff pastry; 1 egg; 2 pears, deseeded, destalked & thinly sliced; 30 gm butter; 2.5 ml ground cinnamon; 60 ml brown sugar; 15 ml Darling Sweet Honey & Salt Toffee Spread; 30 ml plain yoghurt; 100 gm roughly chopped nuts; 15 ml cream; 45 ml Darling Sweet Honey & Salt Toffee Spread.
Method: Preheat oven to 200˚C. Roll and cut puff pastry into a circle in a 12-inch pizza pan/baking sheet. Crimp pastry edges and prick crust with fork. Brush with beaten egg and bake for about 20 minutes until lightly brown.
Melt butter in a medium pan over medium heat. Add pear slices, cook for 5 minutes. Add brown sugar and cinnamon, cook for another 5 minutes.
In a microwavable bowl, stir together Darling Sweet Honey & Salt Toffee Spread and yoghurt. Microwave for 30 seconds and stir until combined. Brush toffee and yoghurt mixture over baked crust. Arrange pear slices over caramel and top with chopped nuts. Bake pizza for 20 minutes until golden brown.
Combine 45 ml Darling Sweet Honey & Salt Toffee Spread and cream in a bowl. Microwave for 20 seconds, stir until combined. Drizzle over pizza. Slice pizza into 8/10 wedges and serve with rocket and vanilla ice cream on the side.
