Snoek and chips salad

Snoek and chips salad. Yes, that’s right! Snoek and chips of the salad variety was quite a thing on the West Coast. It literally turns the winter staple of snoek en patats on its head with a comforting summer salad.

But if you’re having calorie or carb guilt pangs, substitute the chips with sweet potatoes.

Ingredients: 1 lettuce; 200 gm freshly made potato chips; 1 onion, sliced into rings; 2 tomatoes, chopped, 2 – 4 hard-boiled eggs, sliced; 500 gm cooked snoek, flaked; 5 Tbsp lemon juice; 1 tsp mustard powder; 250 ml fresh cream; 6 whole radishes.

Line a salad bowl with lettuce leaves. Layer chips, onion rings, tomatoes, egg and snoek on top. Sprinkle with lemon juice. Mix the mustard and cream and pour over the salad. Garnish with happy-looking radishes.
