Full-bodied and soft on the palate, the 2015 Cabernet Sauvignon from award-winning boutique winery Seal Breeze in Lutzville delivers a noteworthy performance.
Gorgeously expressive, it has flavours of berries, prunes and cigar box at a fairytale price of only R165. After five years of ageing, this dense wine is beginning to sing and simply must be tried right now.
Winemaking at Seal Breeze is remarkably old-school. Winemaker Joan Wiggins steers the ship, working closely with right-hand man Tendai Chimhanda and five seasonal workers. Not only are the grapes grown organically in lime soil, each bottle of wine is hand-made – literally. The latter starts with cutting, pruning and picking, followed by hand-pressing and foot-stomping the traditional way. The wines are then matured in French and American oak barrels for three to five years.
Joan explained that terroir was extremely important. “The lime soil in addition to the cool afternoon sea breeze from the Atlantic actually give our wines their special flavours and colours. And although I take note of other winemakers’ tips, I nevertheless follow my instincts when determining the quantity of wood to use, the grape’s taste and intensity. It’s a deeply personal process and I believe my wines are heaven-sent.”
