Melt in the mouth


    Sweet side dishes are just so West Coast – best to throw caution to the wind then in terms of calories when you sit down to one of these meals.

    Super quick and easy, Soetpatats (caramelised sweet potatoes) taste like pudding. Prep in advance, then finish off in under 10 minutes right before serving.

    The ingredients list is simple: 4 – 6 sweet potatoes, 3 sticks of cinnamon broken into pieces, grated rind of 1 orange, 30 ml olive oil, 45 ml butter, 250 ml sugar, ground coriander and salt. Even simpler is the method: combine all ingredients except the cinnamon sticks and orange rind in a pan with a splash of water. Bring the liquid to boil, then cover and cook for 3 minutes. Peel the potatoes and cut into slices. Layer the slices and sugar in saucepan, ending with a layer of sugar. Dot the pieces with butter and then place the cinnamon and orange rind on top. Reduce heat, cover with lid and simmer. Add a little water if the sweet potatoes are too dry.
